Principles of enolgy. Microbiology and chemistry of wine. 02-PENM
Presentation of the majority of chemical and microbiological processes occurring during wine production. Special emphasis is directed on chemical processes starting from alcoholic fermentation and ending on aging of wine in barrels and bottles. The basic goal is "the culture" of wine, to be familiar with the large variety of grapes, their cultivation and their protection against diseases and insects.
An indication of complexity of wine production must be the main task of the lecture. Besides, this lecture should increase the culture of drinking of alcoholic beverages, especially wine, among young, well educated people.
